Chickpea "Tuna" Salad

Enjoy this vegan version of classic tuna salad made with chickpeas. I first tried chickpea "tuna" salad at Cornucopia Health Foods - a wonderful health food store in Sayville, NY. Loved it! So I went to work on my own recipe. Ingredients 1 can chickpeas (Eden Organics brand, recommended) 2 tbsp vegan mayonnaise (canola or olive oil based – my favorite vegan brand is Just Mayo) 1 tbsp organic pickle relish (try Woodstock brand or see link below*) 1/3 cup finely chopped celery 1/3 cup finely chopped carrots 1.5 tsp Frontier brand Organic Seafood Seasoning** 1/2 tsp turmeric 1/2 tsp garlic powder 1 tsp parsley 1 tsp basil Sea salt and black pepper to taste Instructions Rinse and drain chickpeas
