Yummy Brownie Bites
Prep time: 10 minutes
In a food processor, combine the following:
1 cup sweet potato – baked, peeled and cut in cubes
2 eggs or flaxseed "eggs" (see separate recipe)
1/3 cup honey or agave
2 tbsp coconut oil, melted
3 tbsp coconut flour
1/3 cup raw cocoa powder
1.5 tbsp baking soda
¼ tsp sea salt
½ cup mini chocolate chips
Blend until smooth, add ½ of the chocolate chips and blend.
Add remaining chocolate chips and pulse just enough to mix through.
Fill mini muffin cups about 2/3 full.
Bake at 350oF for 20 minutes, remove from pan, and cool on a wire rack.
Makes 24 mini muffins.
Store in a seal container in the refrigerator. These also freeze well.
