Marvelous Muffins

Marvelous Muffins
Prep time: 40 minutes
In a large bowl, combine:
1 cup almond flour
1 cup oat flour
¼ tsp sea salt
½ tsp baking soda
Mix well.
Then add:
¼ cup coconut oil, melted
¼ cup honey or agave
3 eggs or 3 flaxseed eggs (see separate recipe)
1 tsp vanilla extract
½ cup blueberries, cranberries, apples, walnuts, and/or mini chocolate chips
Stir until well blended.
Fill mini muffin cups about 2/3 full. Bake at 350oF for 20 minutes, remove from pan, and cool on a wire rack.
Makes 12 mini muffins.
Store in a sealed container or freeze.
