Scrumptious Split Pea Soup with Veggies
Prep/Cooking time: 1.5 hr
In a large pot combine:
2 tbsp extra virgin olive oil*
1 onion, diced
4 carrots, peeled and sliced
1 sweet potato, peeled and chopped
2 cloves garlic, chopped
2 tsp grated ginger
Heat over medium heat for 10 minutes
Add:
1 lb green split peas
4 cups vegetable broth
4 cups water
1 tsp black pepper
1 tsp thyme
1 tsp sea salt
1.5 tsp rosemary
1.5 tsp turmeric
Bring to a boil, lower heat and simmer covered 1 hour.
Puree with an immersion blender (I like to leave a few chunks for texture). This makes a fairly thick soup. Add more water or broth to desired thickness.
Makes about 7 – 1/5 cup servings.
*Note that extra virgin olive oil should not be heated above medium heat on the stove top. For higher temperatures, use a high heat oil such as expeller pressed canola oil or coconut oil.
