White Bean Mash
Prep and cook time: 15 minutes
4 cloves garlic
½ cup green onions, white and greens sliced
1 cup shiitake mushrooms, chopped
2+ tbsp vegetable broth
1 can cannellini beans, drained
½ tsp ground or fresh ginger
sea salt and freshly ground pepper, to taste
2 cups frozen spinach, chopped (or substitute fresh)
4 tbsp nutritional yeast
Saute garlic, green onion, and shiitake mushrooms in vegetable broth over medium heat for 5 minutes – add additional broth if necessary.
Add beans, ginger, sea salt and black pepper and stir into mushroom mixture.
Add spinach and nutritional yeast, stir well, and sauté for an additional 5 minutes. Serve with a salad or also makes a great dip. Make 4 servings.
