Enjoy this vegan version of classic tuna salad made with chickpeas. I first tried chickpea "tuna" salad at Cornucopia Health Foods - a wonderful health food store in Sayville, NY. Loved it! So I went to work on my own recipe.
1 can chickpeas (Eden Organics brand, recommended)
2 tbsp vegan mayonnaise (canola or olive oil based – my favorite vegan brand is Just Mayo)
1 tbsp organic pickle relish (try Woodstock brand or see link below*)
1/3 cup finely chopped celery
1/3 cup finely chopped carrots
1.5 tsp Frontier brand Organic Seafood Seasoning**
1/2 tsp turmeric
1/2 tsp garlic powder
1 tsp parsley
1 tsp basil
Sea salt and black pepper to taste
Rinse and drain chickpeas and mash very well with the potato masher or fork. Should be fairly smooth.
Add remaining ingredients and mix well. Store refrigerated in a sealed container.
Try is as a “tuna” melt by topping with shredded vegan cheese (like Daiya or Follow Your Heart brands) and place under a broiler for 3 minutes or until cheese is melted.
* Make your own sweet pickle relish. A great recipe I found is:

** I’m obsessed with this seasoning. It’s an organic version of Old Bay brand seasoning and really gives this recipe a nice spice. I also use it on sautéed and roasted veggies and roasted chickpeas…yum!
